I am so excited to share this combo with you all because it is just THAT GOOD. So I think that the secret sauce is in the rice because that’s the most hearty part of the entire bowl and it is the base so you want to make sure you’re doing that all THE WAY UP. I’ll share below my rice recipe along with the way I stack my bowl and which ingredients I use. This recipe is made to be super easy so a lot of the ingredients are just veggies cut up, meat cooked & seasonings added. Nothing too crazy!

HOMEMADE MEXICAN RICE RECIPE (feeds 4)

Ingredients:

2 cups jasmine rice

1 tbsp ground paprika

1 tbsp ground cumin

4 tbsp salted butter

Directions:

Bring 3.5 cups of water to a boil.

Strain and rinse rice. (I do it twice.)

Add in cumin, paprika, butter, and rice to the pan. Stir until fully combined.

Cover and reduce heat.

Steam for 10-15 minutes. Feel free to lift the lid and fluff with a fork in between.

Serve & enjoy!!

TACO NIGHT TACO BOWL

Ingredients:

Lively Lauren Homemade Mexican Rice (See Recipe above)

Ground Turkey ( I recommend using 80% Lean, 20% Fat for flavor, or even 85% Lean, 15% Fat works)

Trader Joe’s Taco Seasoning ( I also have a homemade Taco Seasoning that I like to make if I have time, keep scrolling for that)

Red Onion

Cherry Tomatoes

Romaine Lettuce

Mexican Cheese Blend

Trader Joes Salsa Verde ( or any salsa verde will do)

Medium Taco Sauce ( Trader Joes or Ortega)

Avocado

Sour Cream (optional, don’t forget your Lactaid if you need it 🥴)

Crushed Hard Shell Tacos (optional, but so much fun)

Directions:

Layer all of those1 ingredients in the order listen above and ENJOY!

You may have to check your spice rack/drawer/cabinet/whatever you use to make sure that you have all of these so that you can grab them when you’re at the store. Which, honestly, is the main reason why I normally just pick up Trader Joe’s Taco Seasoning because it’s so easy but I love that you’re deciding to go on the adventure of creating your own seasoning so here we go, let me show you the wild side.
