Not only do these pancakes only take 15 minutes to make, they’re also gluten-free and dairy-free! Some of us, LOVE TO HEAR THAT. For those of you who could really care less, think of it this way instead, these pancakes are packed with protein, fiber and healthy fats!

I love these pancakes because everything can me made super quickly in a blender and then put right onto a hot pan and you’ll have some amazing pancakes in 15 minutes with MINIMAL clean up. What more could you ask for, honestly?!

The base for these pancakes is oats and banana— so I’ve obviously coined them as ‘banana-oat pancakes’ in my household.

BANANA OAT PANCAKES

Yields 4 pancakes

Ingredients:

1/2 cup steel cut oats

1 cup milk of your choice

1 banana

1/2 tsp salt

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

Directions:

  1. In a blender, add in your oats and pulse until fine ground into a flour. You can absolutely use regular flour but I like the nutrients oats bring to these pancakes so that’s why I use oats and blend them into a flour.

  2. Add in your other dry and wet ingredients to the blender and blend everything until juts combined. Be sure not to over mix the batter.

  3. Heat up a non stick pan.

  4. Cook pancakes until bubbly around the rim and in the center. Flip and cook fully through.

  5. Serve pancakes with fresh fruit, whipped cream, granola butter, almond butter, maple syrup, ect!

  6. Enjoy!!
