Banana Bread
I am so so so so excited to share this recipe with you all today! Not only is it gluten-free and dairy-free but it’s also added sugar free! HOW MUCH DO WE LOVE THAT! We love it a lot. Don’t get me wrong though, we love sugar too. BUT we love it in moderation and we love the kind that’s good to our bodies and makes us feel fabulous. So with that in mind, in this recipe, the sugar content in this recipe comes from the bananas!!
The KEY ingredient in this banana bread is the BANANAS. who knew?!??! anybody? ;)
In order to make this banana bread it’s BEST, you need to wait until your bananas are so brown that they’re like freaking you out. The need to be slimy and kinda creepy looking because that’s when they’re their sweetest! It’s the easiest way to squeeze the sweetness out of the banana and you will be so happy you waited for the bananas to brown once you take a big bite out of this banana bread!!
Ingredients:
2 cups oat flour
2 eggs
2 tsp baking powder
2 tsp baking soda
2 tbsp oat milk
1/2 tsp salt
6 ripe bananas
1 tsp vanilla
(Don’t add chocolate chips if you want to keep this sugar free! Unless you can find sugar free chocolate chips then GO FOR IT!!)
OPTIONAL: 1/2 cup semi-sweet chocolate chips, dark chocolate chips (less sugar)
OPTIONAL: Walnuts
Directions:
Preheat oven to 375 degrees.
Mash up bananas with a fork in a medium mixing bowl. Add in eggs, milk and vanilla. Mix until combined and set aside.
In a separate medium mixing bowl, whisk together the dry ingredients.
Slowly add the dry into the wet ingredients. Add about 1/2 cup of the dry ingredients at a time. Mix until fully combined then add another 1/2 cup.
Once all of the dry ingredients have been added, add in chocolate chips if you’d like.
Pour into a non-stick loaf pan and add toppings if you’d like.
Bake for 40-45 minutes. Use knife or toothpick to test the center of the loaf before removing from the oven.
Allow to cool fully before slicing!
