Special Olympics of Illinois Nutrition Guidelines

In partnership with the Illinois Public Health Institute (IPHI) team, I was able to participate in the strategy and scope of the Nutrition Guidelines for the Special Olympics of Illinois. On my own, I created the nutrition guidelines to be used at all Special Olympics of Illinois events after being approved by the board of directors. These guidelines will be used by the teams and event coordinators to ensure the athletes and other participants will be provided a healthy array of options at all Special Olympics sponsored events, including events outside of Illinois. Coaches, administrators, and other individuals responsible for ordering food or refreshments are obligated to use these guidelines during purchasing. To create the guidelines, I used the Academy of Dietetics and Nutrition RDAs and DRIs. The skills to complete this project from start to finish are listed below.
