Shrimp Sesame-Soyaki Bowl

I am so excited to finally be sharing this recipe because it has become a fan favorite at my house these days! I will also be sharing a reel video to my Instagram page so that you can get a visual on how to make this dish as well! I hope you all enjoy this asian cuisine themed delight! It’s truly one of the easiest and most yummy meals I make during the week, especially when I’m super busy!

Ingredients:

1 cup rice

1 lb shrimp ( I buy wild caught or sustainable-farm raised)

1 head of cauliflower, raw

1 red pepper

1 green pepper

1/2 yellow onion

1 cup raw broccoli

1/2 cup raw water chestnuts

1/2 cup raw carrots, raw

1 tsp sesame oil

1/2 cup Island Soyaki sauce (Trader Joes) or regular Teriyaki sauce

optional, but super delicious— sliced pineapple

Directions:

Start by prepping your rice. I’m not an expert on rice but, the one thing I do know about rice is you must rinse it before cooking it!

After you’ve started your rice, rinse and chop your veggies.

Steam them in a pan with about 1/3 cup water and cover with a lid for 3-4 minutes. You don’t want to steam them for too long because the cauliflower will become mushy and nobody really wants that.

Once steamed, add in sesame oil and teriyaki sauce. Give it a big stir until everything is combined.

Let it simmer on low for 5 minutes.

Plate with rice, stir fry and add some pineapple on the side.
