Lebanese Garbanzo Bean Salad
I’m so excited to finally be sharing this recipe with you all! I found a more basic version on Pinterest when I was searching for Mediterranean Diet recipes. I’m not on the Mediterranean Diet, I don’t support diet culture, but I do love many of the recipes that have been labeled “Mediterranean Diet friendly” on Pinterest so that’s what led me down this rabbit hole.
It’s so hard when looking for recipes, especially when you’re looking for something healthy but also are trying not to contribute to diet culture. It’s either all butter and canola oil or keto insanity and ridiculous 10-day cleanses. By the way, canola oil isn’t as bad for you as they say. I mean don’t get me wrong, I won’t be buying it, but if it were my only option I would totally use it. Avocado and Organic Olive Oil are expensive so I can totally understand how eating healthy can be daunting for anyone on a budget.
With all of that being said, my goal is to help you all nourish your body in an accessible and approachable way. I want to empower you to get to the grocery store and feel empowered and feel like you know what to buy to nourish yourself on the most basic level. You could find a lot of the ingredients I use at any local farmers market or grocer. You don’t have to go somewhere fancy or spend $250 to fuel your body. Leaving the prices here so you can see how affordable this recipe is. Rant over, let’s move onto the recipe!
Lebanese Garbanzo Bean Salad
Ingredients (recipe makes 2-3 servings)
1 can Organic Garbanzo Beans ( $0.99)
1 sweet onion ($0.49)
1 bunch of Organic Parsley
1/3 cup Organic Extra Virgin Olive Oil ($7.99 for the bottle)
4 cloves of garlic ($0.39 for garlic head)
3 lemons ($1.49 for 3)
Directions
Rinse garbanzo beans with water super well, 2-3x with a fine strainer.
Thinly slice 1/2 sweet onion. I mean like as thin as you can.
Chop parsley.
Combine all three in a bowl and toss together.
In a mixing cup or bowl, use a garlic mincer and mince the 4 cloves into the bowl.
Squeeze lemon juice into the bowl and pour in olive oil.
Whisk until fully combined.
Pour over salad and give it a good toss to mix well.
**Option if you’re saving for leftovers or meal prep!! Don’t add dressing until you are ready to eat so feel free to separate the salad and portion out the dressing into separate containers!
