We ALL LOVE a chopped salad. Don’t even try to front, yes you do. This is one of my favorite salads of all time and has become a staple in my home. It’s super satisfying, made with inexpensive ingredients and super quick & easy to assemble. All the thing we love to see so obviously I’m a fan.

Along with creating recipes that empower and teach you how to fuel your body, I’m also focused on finding ways to make it inexpensive for everyone. Although everyone’s idea of “expensive” and “inexpensive” is different, I do think we can all agree that if I can a few salads for $12, I’m down.


Lebanese Chopped Salad

Ingredients (makes 2-3 servings)

1 bundle Organic Romaine ($0.98)

1 bundle Organic Mixed Green Lettuce ($1.28)

6 radishes ($0.99)

1 red onion ($0.39)

1 red bell pepper ($0.89)

1 yellow bell pepper ($0.89)

1 bundle scallions ($0.79)

4 cloves of garlic ($0.89)

3 lemons ($1.49)

1/3 cup organic extra virgin olive oil ($7.99 for the bottle)

1 organic cucumber ( from my garden, so free :) )

1 roma tomato ($0.59)

1 block of feta ($2.99)

Directions

Start by chopping up all of your veggies. I like to chop everything super small and bite-sized.

Combine in a large salad bowl and set aside in the fridge while you make the dressing.

Mince the garlic, squeeze the lemons and add in the olive oil and whisk until fully combined.

Remove salad from the fridge and crumble feta on top (as much as you’d like)

Drizzle dressing on top and ENJOY!

**Option: if you are meal prepping or saving some for leftovers since this recipe makes more than one serving, feel free to set aside some dressing in a separate container to avoid the salad getting soggy and sad. This way it will be fresh when you are ready to eat the rest!!
